Story
At Muthuthuini Wet Mill, only fully ripe cherries are carefully hand-picked and delivered to the wet mill on the day of harvest to ensure high quality.
Once delivered, the cherries are sorted by size, color, and ripeness, with unripe and overripe cherries and any foreign matter removed. After depulping, the parchment is fermented in water-filled tanks for 12–16 hours to break down the mucilage.
The parchment is then washed in channels and soaked again briefly. Finally, the coffee is sun-dried on African drying beds for approximately two weeks, with the drying process carefully adjusted according to temperature, humidity, and weather conditions until the moisture content reaches 10–12%.
